Saperavi Khashmi is a distinguished dry red wine produced in the Khashmi micro-zone of the Kakheti region in Georgia. Situated within a 40-minute driving distance from the capital, Tbilisi, the micro-zone is located on the edge of Outer Kakheti. Known for its deep red color and complex flavor profile, this wine exhibits a perfect balance of body, velvety texture, and intense aroma.
History
The production of Saperavi Khashmi dates back to the cultivation practices in the region influenced by King Tamar of Georgia, where monks from the David Gareji Monastery played a significant role. The local population, known for their winemaking expertise, has upheld the tradition over centuries. Notable families like the Kokrashvili, Kvarelashvili, and Gokadze have made significant contributions to the wine’s development. The PDO status for Saperavi Khashmi was officially established on April 6, 2018, ensuring the wine's authenticity and quality under Georgian law.
Viticulture
Vineyards for Saperavi Khashmi are cultivated at altitudes between 730 to 800 meters above sea level, primarily on the southwestern slopes of the Tsiv-Gombori mountain range. The region features brown carbonate soils, varying in thickness and clay content, which contribute to the wine's unique characteristics. The grapes, harvested with a minimum sugar content of 20%, must be processed within the micro-zone, although bottling can occur throughout Georgia. The area benefits from a moderately humid climate with hot summers and cold winters, and the wine is produced following strict regulations to ensure quality and authenticity.
Tasting Notes
Saperavi Khashmi offers a complex bouquet with intense notes of fresh forest berries and a distinctly herbaceous quality on the nose. On the palate, it is rich and well-balanced, featuring bright raspberry, blackcurrant, and cassis flavors complemented by velvety tannins and vibrant acidity.
