Chkhaveri (ჩხავერი in Georgian), an ancient Georgian grape variety, hails from the western regions of Adjara and Guria. The name "Chkhaveri" is derived from the Georgian word "chkhava," meaning "sandy," referencing the sandy soils where it thrives.
Viticulture
Chkhaveri thrives in the humid, mild climate of western Georgia, particularly in Adjara and Guria, where sandy soils enhance its unique qualities. This late-ripening grape is typically harvested in late October, benefiting from an extended growing season that develops its complex flavors. Traditional training and pruning methods ensure good air circulation and disease management, crucial in this humid region. Semi-Sweet. Because of its late-ripening nature, Chkhaveri grapes can develop high sugar levels. During fermentation, the temperature often drops, which stops the fermentation process and naturally lends itself to producing semi-sweet wines.
