Chkhaveri

Chkhaveri is a late-ripening coastal grape variety known for its unique color, which naturally lends itself to the production of rosé wines. Grown primarily in the coastal regions of Georgia, Chkhaveri thrives in the humid climate and light, well drained sandy soils.

Origin/Name

Chkhaveri (ჩხავერი in Georgian), an ancient Georgian grape variety, hails from the western regions of Adjara and Guria. The name "Chkhaveri" is derived from the Georgian word "chkhava," meaning "sandy," referencing the sandy soils where it thrives.

Viticulture

Chkhaveri thrives in the humid, mild climate of western Georgia, particularly in Adjara and Guria, where sandy soils enhance its unique qualities. This late-ripening grape is typically harvested in late October, benefiting from an extended growing season that develops its complex flavors. Traditional training and pruning methods ensure good air circulation and disease management, crucial in this humid region. Yields are moderate, focusing on quality over quantity, with grapes carefully handpicked to maintain high standards for winemaking. Organic and sustainable practices are often employed to protect the vines, contributing to the distinctive and celebrated wines of Chkhaveri.

Wine styles

With its unique color and late-ripening traits, Chkhaveri gives winemakers several options for crafting exceptional and distinctive wines.

  • Rose wine when grapes reach full ripeness and wine is made with full skin contact, you end up wines that have this beautiful rose color, extremely unique and reconginizable nose and very interesting palate that is excellent for aging.

  • White wine. When grapes reach full ripeness and the wine is made with little or no skin contact, Chkhaveri delivers unique white wines with good acidity and complexity. These wines offer a distinct character that sets them apart and makes them highly enjoyable.

  • Semi-Sweet. Because of its late-ripening nature, Chkhaveri grapes can develop high sugar levels. During fermentation, the temperature often drops, which stops the fermentation process and naturally lends itself to producing semi-sweet wines.
