Qvevri are large, ancient clay vessels used in Georgia for fermenting, aging, and storing wine. Buried underground, they maintain a consistent temperature for natural fermentation. This 8,000-year-old method is one of the oldest in winemaking. The qvevri’s shape and clay enhance the wine's flavor and character by fermenting grapes, including skins, seeds, and stems, for several months to years. Recognized by UNESCO, this method highlights its cultural and historical importance in Georgian winemaking.
