Tsarapi is a distinctive amber wine produced in the Tsarapi micro-zone, located within the village of Kardenakhi in the Gurjaani region of Georgia. This micro-zone is situated on the north-east slopes of the Tsiv-Gombori Range, at altitudes between 350 and 550 meters above sea level, providing an ideal environment for viticulture. Tsarapi wines are celebrated for their rich, velvety texture and deep amber color.
History
The Protected Designation of Origin (PDO) for Tsarapi was officially established on May 11, 2020. The region's winemaking traditions have been refined over centuries, preserving the unique combination of climate, soil, and traditional techniques. This long-standing heritage has contributed to the high quality and distinctive characteristics of Tsarapi wines.
Viticulture
Vineyards in the Tsarapi micro-zone are cultivated at elevations ranging from 350 to 550 meters above sea level. The soils here are predominantly deluvial-proluvial carbonated clay with clay and leptosol layers. Tsarapi wine is primarily made from the Rkatsiteli grape variety, with up to 15% Kakhuri Mtsvane and/or Khikhvi allowed in the blend. The grapes must be harvested with a minimum sugar content of 21%, and all winemaking processes, including fermentation in traditional Qvevri (clay vessels), must take place within the Kakheti zone. Bottling can occur throughout Georgia but must adhere to stringent regulations to ensure the wine's authenticity and quality.
Tasting Notes
Tsarapi wines are known for their deep amber color and complex bouquet of aromas. These wines feature a rich, energetic, and velvety texture, with high acidity that adds freshness to the palate. The aroma is intensely fruity with key notes of citrus and dried fruits, complemented by herbaceous undertones. As the wine matures, additional hints of pine and eucalyptus emerge, creating a well-rounded and distinctive bouquet. This unique combination of terroir and traditional winemaking techniques results in a wine that is both distinctive and highly esteemed for its quality and flavor profile.
